foodsies {of the week}


Here are some of the foodsies I have been lovin on this week:

toast with jam/english muffins with jam
jam not jelly. be sure to use the jam with chunks of fruit still in it. If you feel crazy, mix cream cheese and jam on your toast - rich flavor yet still refreshing.

water with fresh fruit for flavor
Slice up some oranges, throw in some strawberries, toss in some raspberries, or mix it up with slices of cucumber in your water. If you are feeling adventurous, add pineapple and fresh mint leaves to your water. Like a little taste of summer in a glass. Makes drinking water more exciting.

Funfetti cookies
Learned this lil trick in college that uses funfetti cake mix to make delicious cookies. yum yum. Take one box funfetti cake mix and just add 2 eggs and 1/3 cup canola oil. Bake for 8-10 minutes at 375. Still nervous about baking cake as cookies? click this link for more detailed instructions.

baked sweet potatoes
just got this recipe from a friend and love it. They are addicting to eat! Cut about 4-6 sweet potatoes into cubes and fill a 13x9 glass pan. Toss potatoes with 1 tBsp. olive oil, 1/2 tsp salt, 1/8 tsp pepper. Cook at 375 for 25-30 minutes. Once 30 inutes are up, combine 2 tBsp. maple syrup and 2 tBsp. lemon juice and pour half of the mixture on potatoes. Once stirred in gently, bake in oven for an additional 10-15 minutes. Take potatoes out, drizzle the rest of the syrup/lemon mixture and serve. So so good!

bagels for lunch & dinner
dinner:one side of a bagel with a slice of tomato, slices of onion, basil, cracked pepper, and colbyjack cheese. Broil in oven til warm and cheese is melted.

breakfast: bagel, cream cheese, green apple slices, and honey drizzled on top.
